PDO stands for Protected Designation of Origin, a cooking abbreviation.
EU legal label for foods, wines and spirits produced, processed and prepared entirely in a defined region using recognized know-how, such as Parmigiano Reggiano, Prosciutto di Parma and Kalamata olive oil. A red and yellow seal marks registered products.
Example: Only cheese made in the designated provinces can be sold as PDO Parmigiano Reggiano.
Usage notes
The scheme dates from 1992 and sits alongside PGI (Protected Geographical Indication), which requires only one stage of production in the region. National names include AOP in French, DOP in Italian and Spanish, and g.U. in German. After Brexit, the UK runs its own parallel PDO scheme.
