EVOO stands for Extra virgin olive oil, a cooking abbreviation.
The top grade of olive oil, extracted solely by mechanical means without chemical solvents and with free acidity of no more than 0.8 percent under International Olive Council standards. Recipes specify EVOO for dressings, dipping and finishing, where its flavor shows.
Example: Drizzle the burrata with EVOO, flaky salt and torn basil.
Usage notes
The abbreviation was popularized by TV cook Rachael Ray and entered the Oxford American College Dictionary in 2007. Grades below it include virgin olive oil and refined oil sold as "pure" or "light" olive oil, which tastes milder and tolerates higher heat. EVOO is pronounced as letters, E-V-O-O.
