env stands for Envelope, a cooking abbreviation.

Older American recipes use env for powdered ingredients sold in paper envelopes, especially unflavored gelatin, dry yeast and seasoning mixes. One envelope of unflavored gelatin holds about 1/4 oz (7 g), enough to set 2 cups of liquid.

Example: Sprinkle 1 env unflavored gelatin over 1/4 cup cold water and let it bloom for five minutes.

Usage notes

Dips and casseroles from the 1950s onward often call for an envelope of dry onion soup or ranch dressing mix, typically about 1 oz. When converting to bulk gelatin, one envelope equals roughly 2 1/4 teaspoons of powder. Plural is envs or env.
